This may require you do do things in a different order, but what if you just open the app, Messaging or mail, and just attach the picture or video you want to send?
I generally do it this way myself. Start to compose a message and then attach the photo i want to send.
Messaging app>Contact>Attach>Picture>Gallery Or Camera.
At the spot to choose whether or not to send a picture, video, or contact there is a list but the first one is,
Picture
Video
Audio
App Recommendation
Location
Contact
Appointment
That is the way I have been doing it but this may even take longer I don't know as I haven't tried coming from the other side. IE: picking picture first then contact.

I was aware of these options, however, you nailed it on the head when you said "That is the way I have been doing it but this may even take longer I don't know..." I'm trying to streamline my use of the phone and make it quicker. Your suggestion DOES work but is a bunch more steps.
For instance, if I have just taken a picture or I am viewing a picture in the gallery, either long-pressing the picture or quickly hitting "Menu" bring up the little "Share" option. At that point is where I get annoyed

With your suggestion, like I said, it DOES work too, however, I have to (1) back out of the app I am currently in (2) go to my home page and/or app drawer (3) find the Messaging app or Mail app and launch (4) open a new message/mail and address it (5) attach the file(s) I want to send and then send

You should try "coming from the other side" to do the attaching from within the app compared to what you normally do. You might have WAY LESS stuff to scroll through and find it much easier for yourself!
