Help Jelly Bean update terrible, please help!

After a few glitches I finally succeeded in flashing a rom. I now have Custom Canadian Jelly Bean installed and it is great! The phone is light and zippy again and I have all the bells, whistles and functionality in the stock JB, as well as a few that telus had stripped out for whatever reason. There are some other gizmos that can be installed with this rom that I will be fiddling with shortly, but I'm just gonna get my head around this new world before I do anything more. This is fun!

I wish I had the understanding and courage to do the flashing. I don't like JB either and wanted to go back to ICS. I thought I could just do a factory reset, but all I accomplished was losing a lot of info because I backed up to Kies, but now Kies won't work!! So, so frustrated!!
 
In reading this, it looks like there is a way to get back ICS, but it involves flashing the ROM? How does one do that?
And if I do that, will I get ICS with all the functionality it had? I'm especially worried about losing the pen and handwriting functions.
Sounds like rooting isn't the way to go either, because I'll lose the pen / handwriting - which is the ENTIRE reason I bought this phone over an HTC or Galaxy S.
What I really want back are the ability to handwrite with either pen or finger, swipe to call/message in one step and the old Picture Editor (since I used it to send pics of fabrics, etc. to clients with little markups).

The speed and battery drain are irritating as all get out, but it's really the loss of these functions that galls me! One handed operation and one step functions are almost all gone now.

So -- any advice on how to get back the old ICS without killing critical functions?
