I use k-9 and like it much better than stock. There is also something called Improved email on the market but it just seemed the same as stock. I have found though that since I am rooted and using the BlackGlass theme I cannot set signatures.
Edit: OK finally figured it out. If you are rooted and the directions in post #3 don't work try this More > Settings > Account Settings > Sending Mail > Composition Defaults
When I go to Menu > Settings, my choices are Display, Interaction, Network, Mischellaneous, Privacy, and Debugging. No options for account settings or composition defaults. I'm rooted, running Rubix 1.9.0. Kind of odd that root status affects the settings on an app. Anyone else have other solutions?
You need to get to the actual email account. When you open K-9 you will see Unified Inbox , All Messages, and your actual email account. Click on your account then menu>more>settings>account settings>sending mail>composition defaults.
