I plugged my phone in to charge and every other minute it keeps going into dock mode for like 5 seconds and either flicking back to my normal home screen or I have to X out of dock mode. What is going on?????

In a dock, a resistance bridge between the microUSB socket's pins 4&5 triggers the dock mode and starts the HTC desktop Dock app or the Navigation app (depending on the resistance's value).
So you might have a close look at your phones microUSB plug and the charger's cable microUSB socket for some dirt.
Dirt can act like an electically resistance.
Also you could try with an other USB cable.
But if you didn't find an issue at your phone's microUSB socket you might install the app 'Dock No-Op', free in Market
