In S galaxy s2 how to type "<" and ">" using default and swype keyboard also where is the shift key

to get <> press the SYM key, then long press ":" and/or ";" keys
there is no shift key as such. You long press a key to get the shift character.

due to the stock kb being so poor im using Swiftkey x and omg its amazing would recommend that
