Root lag fix frustration

yep, just flashing a rom would probably be simpler. I tried doing a lagfix before I got into flashing roms and screwed my phone up. I haven't made a mistake (yet) flashing roms. There are a lot of resources out there on how to either lagfix or flash roms to your phone, google it, youtube it, and go to the captivate development section in the xda forums website.
Be careful, you could possibly screw your phone up pretty bad although any damage usually won't be permanent.

Definitely do a custom ROM. If you're on stock 2.2 right now, you could also just flash a kernel with a lagfix like SpeedMod. But flashing a custom ROM would give you the nicer look and the SpeedMod kernel is included.
