Help Lollipop help needed on S4

Where do I start!? I updated 2 weeks ago to the eagerly awaited Lollipop update on my S4 on EE, after the OTA update I then wished I hadn't bothered!! firstly when I bring down the top bar I have on that screen 2 options, S finder and quick connect, which I want to get rid of or change to something I can actually use! secondly where is the option to show when your headset is plugged in, I cant find it, where also is the option to allow me to show my texts/messages as they were in kitkat, ie. they scroll down and don't just say NEW MESSAGE! and while we're on the texts where has my double vibration gone so I know its a text rather than another message type, I am unable to find these options to change this the way I want it like on any other android version, its like I now have an iphone!!
Phoned EE tech and you get an errrrrr, Samsung direct I got an ERRRRR so does anybody know? or am I stuck with this pile of rubbish that boffins produce and make my phone go backwards! and slower and well nowhere near as good!
so for now I'm back on the good ol kitkat! Ive tried to like this and tweak it as a stock unit but sadly is the only option to root it and change it the way I want or are there some hidden options I'm missing, any help would be much appreciated! cheers, here's to an android world not an Iphone takeover as that's what it feels like!
 
Phew!! you really did miss a lot of options.
The upgrade did warn that you will have to restore your settings. Going back to Kit Kat really is going backwards as far as I'm concerned.
As far as those apps you don't want -if you've tried to remove them and are prevented, why not just disable them (go through the normal removal procedure - 'settings, more, apps manager- and select disable)? You can then move the short cut to the trash, then they won't bother you, that's what I've donewith the built in Amazon appand all the other rubbish that was there.
Headset. I've just plugged mine in and a bar has appeared at the top of my home screen. I don't ever use them myself so this is obviously a default setting.
Messages and your other issues. To be able to drag the icon down the screen for the message to expand, change the settings in 'My Device'. I'm not sure about the double vibration but the settings but in My Device, Sounds and Notifications, other sounds can be set by tapping through the options, just tap each kind of message or call and go through all the options on the page that opens, there are loads.
I am also with EE. I've never thought of asking them anything to do with the phone - if they don't actually own the model themselves they won't know. In one of their shops you may have had much more success. If you have a Samsung store near you they will be the ones to give you advice on the phone itself. I find Lollipop is much quicker and I really like it.
