Yep, there are plenty of options to change those out. 
For dialer, I actually like the stock one but some folk prefer Dialer+. It's very feature rich and one I've used in the past.
For camera apps, there's a ton out there. On my Moto G I use the Google camera. However, it's very bare bones. I like the LG camera app on my G2, but use the Google one for lens blur.
VSCO cam is one of the most popular and feature packed.
Most dialer and camera apps are free so give em a shot.

I use ... Pixel Phone Pro (the free version is PP Dialer and Contacts). It is the best phone/contact app I have found to date and n is that someone finally got it right.
