Is there a way to turn ALL sounds down easily/quickly. THe button on the side only turns down the ringer, the text messages and emails are still way to loud.

Anyone?
 
Yes but Wifi overrides 3g (as long as there is a wifi connection available) Though if there isn't a wifi hotspot available then it will periodically scan for a wifi hotspot while 3g is on.

BTW there is an easier answer to your first problem as well.
Menu>settings>sound>Volume>check - use incoming call volume for notifications

^that will make the side volume buttons control ALL sounds
