When building your custom roms, what source do you guys use to find your .apk files?

you can get the stock apk files for the device in the stock rom source.

or if none are available from the interwebs ,you can always pull what you need off the device itself .

Any app. I was just wondering where the most devs get there apk's since there are a plethora of sites available.

Some Devs start from an AOSP base and work up from there, others write their own. It's nothing magical, just a series of carefully written text files.
