Anyone ever moved all their data and apps from one card to another? (I mean the apps with support that actually do wind up on the SD card. I know the difference.)

My best guess would be to do this:
1. Hook up via USB to a computer.
2. Mount the drive to the computer.
3. Copy the folders from the SD card to a folder in your computer.
4. Eject (windows term) the phone from your computer.
5. Unmount the SD card and properly remove it You'll probably have to unmount it twice. Once from the computer and once to remove it.
6. Put in the new SD card in.
7. Repeat the above process except coping from the folder to your SD card.
I didn't have to do that because I started off Icarus with a new 8GB card. From a computer standpoint (which our phone basically is) it should work, but there may be something that they have set up differently.
If this doesn't work and no one else gives another idea. Let me know and we can try something else.
The problem is that apps are stored in a partiton that windows can't handle, so there's no way to copy the files off the card that way. And even if you use somehting like unbuntu, which can see those files, temporarily copying them to the PC can lead to problems.
