Just blew a huge list of apps off my list with Titanium, and not sure what I removed that is now causing my messaging system to crash when i try to view a message and get "the application Messaging (process com.android.mms) has stopped unexpectedly.........I dont think i had a full backup, what's my move?

This is why people say to not do this. In fact, the Captivate FAQ (a forum sticky and mentioned in most threads) also explains this:

Your best bet is to start over with a full flash. If you haven't updated to Android 2.2 yet via Kies Mini, you could try that:
Froyo - CapFAQ

Otherwise, use Odin 1-click to flash back to 2.1:
Resetting/Restoring - CapFAQ
