Root Need some help upgrading to gingerbread.

I'm currently running rooted 2.2.1 and system version 2.3.340. I can't do an ota update because I foolishly deleted some of the stock apps when I first rooted it. What would be the easiest way for me to upgrade to gingerbread and then root that as well? I'm sure I'll have to flash a stock rom or something first. Much thanks in advance.
 
You shouldn't have to worry about the deleted apps. As VoidedSaint said and with the link he provided, you should be able to get to any version or ROM series you want. If desired, you can install a custom ROM, SBF to a stock Froyo or GB rom or, in some cases, even re-install the stock Blur or VZW apps that you deleted. Steps to SBF are found at the same link and can be done with Windows, Mac and Linux. Regardless the direction you go, you shouldn't have any issues if you follow the steps in whatever process you decide on. Good luck!
