Welcome to Android Forums, Paul.
Documentation has become rather limited with phones these days. What people generally find useful is to learn about their particular version of Android and how it works and then familiarize themselves with the specific hardware of their phones. The problem with generic documentation is that even between models of the same manufacturer, the menu choices may be different.
Let us know what you've got and we can show you where you might find better documentation, or if you just need to know how to perform a specific function, then we can help you with that, too.
