maybe I'm just completely missing it...but there doesn't seem to be a way to create a new album...only "All Photos", "Camera Shots", and "All Downloads"...this is my only gripe....

I noticed this also, there is no way to create a new album from the Gallery. I did noticed when I added a new folder called "Wallpaper" it shows it as an album in the Gallery now.
You could try to create a new folder on the card, name it what you want, include a picture and see if the phone finds it and displays it as an album. I do not think the phone will display a folder as an album unless there is a picture in it. There must be an easy way to add new albums from the phone itself, I just have not found it.

No. It is its own category in gallery (the first one).
