Root Noobie question about rooting

Do I need to install a new ROM after rooting to make my Eris run faster? Or will taking out the programs I don't use make it faster without a new ROM?
 
No you don't have to run a custom rom to achieve a better running phone. I started out by rooting, overclocking, and removing apps I didn't use. All of this does help the eris run better. I've moved on though, and am now running kaos froyo, which I really like.
 
How can I overclock without flashing a new ROM after rooting? I just rooted my phone the other day but haven't flashed any ROM's yet but do want to try overclocking first. Thanks for any help.

You need 2 things, zanfur's overclock kernel, and SetCPU (app). You can find the overclock kernel in the link below. It is towards the bottom of the first post. You need the one named overclock-kernel-update-v3.zip. SetCPU can also be found on the xda site. You do need to be a member there to download the items.

You would flash the overclock kernel exactly how you would a custom rom, but note that it is NOT a rom. It just gives you the ability to OC.

I went through the same steps you are in that I rooted and kept my stock rom with OC. That lasted for about 3 days before I moved to xtrSense and found that overclocking isn't even necessary if you choose the right rom. If you want the exact same look/feel as stock choose xtrSense. For vanilla xtrRom is very good. Right now I'm using KaosFroyo and if you follow the instructions on how to optimize this rom you can set the clock speed to stock and it runs great.
