Help Organising contacts on the S2

I just received my Galaxy S2 and I'm having trouble understanding how to organise my contacts. All the advice I've seen online so far has been about organising google contacts, which I know how to do.

My problem is that I have sync'd the phone with my work email, my google account, facebook and of course it has the SIM info too. My contacts now contains the email address of anyone I have ever emailed from work or google, which is literally hundreds of people that I don't want on my phone.

Does anyone know how I can make my contacts only show SIM contacts, or SIM + google, and not pull all these random email addresses from my work account?

I'd be really grateful for any help, I'm not a techie!
 
phone>contacts>menu>more>display options
you can tick "only contacts with phone numbers" under "display options"
also under "select contacts to display" you can choose any combination of phone,sim and google
