If you install CM7.1 (a custom rom), you don't have to worry about updates.
O/W you need to root it to disable the update check. I can't tell you exactly what to do, but you need to alter your build.prop file to say it's already updated or rename a apk file to disable update checks. Maybe Bobstro knows what to do with the stock rom. I have no use for the stock rom since I can't read.
