You will get the update again if you are on a standard VZ software OTA version (not a leaked build).
An app on the phone periodically checks for updates.
If you're rooted, I believe there's an app you rename (or freeze with Titanium) that will prevent that, along with a setting on the phone that prevented it in the past. In fact if you went to settings... about phone... and checked for updates, it'd probably start downloading now.
