Help Question regarding update

I haven't taken the update yet. I'm running ADW launcher as well as Velocity 3. I use my phone primarily for work and have Touchdown as well as task and note programs on my phone. They all have a lot of data on them that I can't afford to lose. I've done a nandroid backup and copied everything on my SD card to my computer (Windows 7). If I go back to complete stock and take the update, do I lose all of this information? If I don't root and just take the update, am I to assume that I can no longer use Astro to reinstall everything?

I really want the update, but I'm more interested in not losing everything on my phone.

If you go complete stock, youll have to do wipe everything. But your sd card shouldnt be affected. Just your internal memory. You can install your apps back with astro, you just wont have superuser to run apps that requires root. Unless yiou root it again but thats a dif story.

So I would have to reload all of my settings for each program again, correct? It wouldn't be hard, I've exported them all, but it's still a PITA.
