What are the advantages of rooting my phone? I mean, I love my phone the way it is. But what are the things you can do with a rooted phone? What are some root-only apps? Another question, if I do a temporary root and remove the bloatware, will it still be gone when I unroot?

Yes, the bloatware will be gone if you do a temporary root. Other benefits include overclocking, wifi hotspot and tethering, and installing custom ROMs like Icarus (see this thread http://androidforums.com/ascend-all-things-root/267406-how-install-icarus-mod.html) and other forms of customization. Some root only apps are Titanium Backup, Set CPU, Cache Cleaner NG, Barnacle Wifi Tether, ROM Manager, and other phone maintenance apps, but those are recommended with permanent root.
