Quick Rollback? Or Quick Brick?

I have this really odd question. When I Bricked my phone a couple weeks ago, during the restoring process I wondered if since the phone was in D/L mode and ready for install, is it possible to just do that with a working phone to perform a rollback say from ZV8 to ZV7.
In other words:

If I reboot my working phone into D/L mode and reinstall ZV7 without doing anything else, will this work?.

The reason I ask is due to the fact that I cannot root the phone with ZV8 and would like to re-root.

Yes, you can go all the way back to V5 if you find the .cab file (just make sure to do a data wipe or you'll end up getting force closes). As was noted, V8 is still rootable.
