Absolutely you can delete bloatware. Easiest way is to just flash a custom Rom with all the bloat removed.
Before you do anything, boot into recovery and do a nandroid backup!!! Trust me on this, you'll be a lot safer if you have a backup.
If you want to stay on your current Rom, just download Root Explorer, or EStrongs file explorer from the Play Store. Open the app, and check in the settings to see if there is option to allow root / up to root or along those lines. Then open the app and navigate to the / System / App folder and delete the app you want to get rid of.
You can delete stuff from sense, and some stuff you can't without breaking other things. Sense is a little weird and certain apps are dependent on others to function properly. If you get weird results after deleting an app, restore your backup.
definately follow RX's advice and be sure to make a nandroid backup before ridding anything on the phone. Rid the wrong thing and you could be forced to flash a new ROM or to reflash your current one if its custom.
I would also suggest you pay for Titanium Backup and get the full licenced copy. It's worth every penny you spend on it. (You still need to download and install the free version) TB has saved my skin a few times
