Root removing files from a rom?

I know I can remove files via Titanium (sometimes) or via mounting it in recovery and doing PC wizardry that I still hate doing cos I worry too much in command prompt lol

but is there a way I can remove certain files from inside a custom ROM prior to flashing it?

just I wanna get rid of things like 'Stocks', 'Peep' and 3D gallery....I prefer the older 2D one..

is this as simple as opening the zip file, removing an .apk and just rezipping it again?

I do it with winrar. (remove apps, that is) :D

Edit.

Open with winrar, delete file, close the x.

yea I realised when I first said it that im guessing I EDIT inside winrar not unzip it otherwise im guessing it will screw up when you go to flash?

ok great...one lil question though...when I was doing the freezing part inside titanium...there was often 2 things associated with say for example..stocks...there was the app and the widget.....is it JUST the .apk I delete of say stocks in the data directory.....because I can only find one stocks file...

also what file is peep?

I deleted both the stock apk and the widget; no clue what Peep is, maybe something with Twitter maybe?

yea I havent flashed yet....looking into changing the boot animation... :D

EDIT: Well it worked perfectly.....was REALLY tense because it seemed to take longer for that first boot lol....the ONLY one thing that I couldnt change was the boot animation as I couldn't find one to my liking so left the old style BIOS animation thats in Leedroid....

BUT the thing that bugs me is I deleted the R2D2 beeping tune out of the notifications directory in the ROM...but it STILL comes up at the beginning...which is weird...because there isn't a audion file inside the boot animation...and well..the file ISN'T in the ROM anywhere that I can see...
