Root resetting knox

Going back to stock via odin will reset your "Custom" status to "Official". Remember to do a full "cleanup" in your super user app for full unroot first.
As for KNOX if it is tripped, it is tripped, no way back from that one I'm afraid. Most rooting methods will not trip it, but installing a custom recovery that you need if rooted to flash ROMS and mods, will. To see your Knox status go to download mode's second screen and the "Knox warranty void" flag is shown as 0x0 (untripped) or 0x1 (tripped) like here, not very clear but it is the fourth line from the bottom.
