Randomly one night my phone went on an infinite boot loop. I cleared the cache and data and re-installed my rom. Then I flashed my boot.img and rebooted and now my phone won't go past rom boot animation.

Also in recovery I get the message
E:Can't mount /dev/block/mmcblk0p36
(file exists)
E:Can't mount CACHE:recovery/log

I flashed the stock rom and cleared phone data, fixed all my problems.

Sorry... looks like you got it working before I saw this. That would have been my next recommendation to load a stock ROM or RUU.
I would suggest going S-OFF if you are still running a custom ROM, it makes it much easier to fix issues and fix problems like this. It is very easy know with rumrunner and firewater S-OFF working on the Rez, no wire trick required anymore.
