ADW Launcher allows you to change the apps that open in the bottom dock bar. I like it better that LP IMHO. It actually hides a second dock bar behind it that you can access by flicking the dock bar up, you can add 6 more apps there. For a total of 10 frequently used apps. ADW Launcher comes as part of KaosFroyo v23, if you don't want Froyo it's also free in the market.

It also has left/right scrollable docks for a total of up to 3 docks and 15 shortcuts with customizable icons.
