Root ROMs and Kernel questions

So I am a huge noob about all of this and I was wondering what the advantages are to loading a different ROM or Kernel onto my newly rooted Incredible. What does loading a new Kernel allow? Are ROMs just the various versions of user interfaces put together (like Sense, stock android, etc)...

What do you use? Thanks for the advice.

kernels overclock and/or undervolt your processor while sometimes enabling wireless N... roms change the entire phone to look and work different... some have sense gone and others have some nice goodies in them... you just have to read and pick what you want
