Doing the S-Off and downgrading the Hboot are actually really beneficial to your phone, no real cons, and when you're s-off you can change your radio and PRI and get rid of those "radio shortage" errors and tremendously increase your signal and data speeds....Do it! ;)

I believe JMZ has a kernel that will allow you to use those roms
