Root Root Incredible 2 with 2.2.1

So, i'm pretty new to rooting, as in this is my first try. I've got a Droid Incredible 2 that i'd like to root. Right now, it's got Android Version 2.2.1 (Software number 1.30.605.4). Can i still follow the guids on these pages?

Also, when choosing a ROM, are there any suggestions? Are the ICS ROMs recommended for this phone? or better to go with Jelly Bean?

**I keep seeing things about how to get your phone to "S-OFF". So I just went into hboot (VolDown+Power), and this is the info i see:

Also, i saw that i can get to 2.3.3 by downloading the RUU and "Flashing with hboot". I downloaded the RUU... how do i Flash?

You do not want to run any ruus...

If you have .97 hboot download and run revolutionary. Simple as that

Scratch that... You're all ready s off. All you need to do is install recovery via hboot,then flash super user.

After some more searching around, i figured that S-Off was where i needed to be. I loaded the recovery, and have tried out a few roms. I have 2 Incredible 2's. One, (that i am testing with) is an old demo, and Verizon won't let me activate it to make calls/data from. The other is my regular retail one. I guess that explains why this one was already S-OFF. My regualr (activated) phone is S-ON, so i'll have to give it a go at rooting that one once i'm done "expiramenting".

I"ve loaded a bunch of ROMs, and am trying to figure out which one i like. the MIUI is pretty cool, but a lot of it is in Chinise, and I can't seem to get themes to apply. Anyway, if you've got any suggestions on ROMs, that's cool.
