Root Root just to delete sense and some htc-apps

So i've been looking at the rooting guides, and now im tempted to root.

Basically i just want to root in order go get rid of sense and some apps like Stock, Peep, News etc. etc. - will this be possible if I root?

And suppose its possible, will i be able to update phone software (not sense, of course) as always without losing the super user abilities?

Oh, and I have a generic desire.
 
Sense is something on top but it cannot be removed simply by rooting but it allows you to delete system apps. My advice root and then get a custom vanilla ROM e.g. Cynanogen however I would wait as hopefully there will be some gingerbread builds soon!
 
It's in and on. It's a customized android with a HTC kernel. Any update will break whatever you do so its best just to get a frequently updated custom Rom
