If you root your phone, you'll want to wait until some developers at the very least release a rooted flashable version of gingerbread. Trying to install any official update when you're rooted will at best just unroot you, but it could easily brick your phone, too. I wouldn't worry about it. If you root, you'll still be getting gingerbread whenever it's released.

As for flashing and rooting, read this post:

As far as bricking your phone is concerned, there is always a chance you could brick it, but if you follow steps correctly, it's very unlikely. That also depends on the root method. Unrevoked is considered the easiest and safest method. If you have a newer Evo (with hboot 2.02), you'll need to wait for unrevoked to get an update, which it will be getting very soon.

There is always going to be a chance of bricking a phone while rooted, however its somewhat hard to actually brick it. Just read up on the rooting for dummies thread.. there is a lot of benificial info there. Now as far as 2.3, the rule of thumb is you don't want to accept any ota updates because they can cause problems while rooted. With that said when you are rooted you will be able to flash a 2.3 rom well before sprint actually pushes the official update.
