I'm looking to root my HTC one M8 (Verizon) and flash custom roms, but if I flashed a custom ROM can i come back to stock unrooted, and if so how?

Yes you can if you just make a stable backup .

Yes this is possible, you'll need to be very careful how you do it though. If you flash any custom hboots or you flash a custom recovery, you'll need to be 100% you flash the correct stock hboot and recovery first. Running an RUU is the preferred method for this because it flashes everythign to stock. Unfortunately we do not have any RUU's for this phone yet, so you'll need to flash all the stock components manually.
Once you do that you'll need to run a few commands through fastboot. I can't remember them off hand, I'll need to look them up.
