Hi,
I currently have a HTC Desire rooted with Cyanogenmod 7,
for my part, i have move many applications (and theres odex) to /system/app (using Root Explorer) , the only apps crashing after move are applications using OpenGL (it look like generating NullPointerException). It can maybe fix be copying frameworks or something like this.

If you are looking to free memory on /data/ ,you can (no rooted phone) set "/data/system/dropbox" to r-x------- then delete its contain, it has free 20MB from me.

PS: sorry for my english, not my motherland language

i would never recommend this,
1. you need s-off
2. i would only ever keep system apps in system.
some apps dont like it there and system gets wipe when you flash a rom or update a rom. if you update a rom without wiping you will keep all your files if it is in data. if its in system its all wiped
