Root Root to delete installed apps only?

I'm researching rooting my HTC Desire (Froyo 2.2), because whereever this unlocked phone came from, about half the available app space is taken up by crapware, and it's seriously ticking me off - if I want to try a new app, I have to delete a current one, and I cannot install updates for anything without the dreaded Low Space icon appearing.

I'll eventually want to put Gingerbread on my Desire, but not quite yet. All I want to do is have more room for apps; I've done the slight mod that 'forces' apps to install to the SD card - but in the end that only helps a little.

My question is, will apps that will attempt (but fail) to delete the pre-installed apps, work after rooting (Like Android System Info), or will it be a more command line or other geeky method to clear them out? Not that I mind, I just want to be clear on the method to clear out the preinstalled crap once the phone is rooted.

Another thing I'm unclear about - Rooting doesn't in and of itself, strip down the phone, right? It just changes the access permissions? I know Unrevoked also installs a custom recovery - but in essence, after rooting, the phone will "look" and act about the same, the changes are mostly in the background?

And yes, of course, I'll still back it up before starting, in case anything goes wrong...

Thanks for any replies!

Bloatware files if you want to delete them manually are just a case of pressing delete, which as a rooted user is what you should be careful of. Deleting things in system folders etc unless you know what your doing is very dangerous.

Your right rooting in itself doesn't strip the phone, but the best way to get rid of all the boatware your talking about is to install a new rom once rooted, you should wipe, which strips all your data, giving your new custom rom (non HTC), a clean bed to work with.

Of course the bloatware space is in system so you can't use that space for apps. You'd then have to look into custom partition sizes to reuse it
