Root Rooting Desire

Guys.

Just looking for advice and info. Now i am new to Android but have been using Jailbroken iPhone for a long long time.

What i am confused about is that the Desire has OS version 2.1 but what i cant see is if i root my phone will i still be using 2.1 or will it be an earlier one?
