I have decided that i want to root, and the main reason is because some people have told me that i can install Sense... Now is this true? If it is, then how will it affect my phone (performance/reliability)? What do i need to check before i root(Are there any restrictions/updates or whatever that i have installed that can mess up my phone?) Also, where do i start?

You can pretty much install anything once you're rooted. Rooting won't affect your phone's performance/reliability, it just gives you more control over your phone. You can read this post I made: https://rainulf.ca/?id=191 - But first, you can start by Googling around, gather as many information as you need until you're satisfied. In any case, enjoy rooting!

read very carefully and ask there anything unclear before doing anything because you can brick(KILL) your phone as many people did. if you don't know what are you doing you better leave your phone as it is.
I rooted my Optimus One very easy with gingerbreak 1.20
