Root Rooting, side or load full ROM install?

Ok since I just ordered a NC as a refurb since the price was right for what I'd use a tablet as(mainly a toy) I know for certain I'm going to root it.

Is there a big benefit to doing a full rom install versus doing a side load from an SD card?

I plan on using it more as a tablet than anything but have never attempted a root before so easy is also better while I learn as I go.

I just(finally) got gingerbread on my Galaxy S through the official and I like it so I'm looking for a 2.3 build to install.

Asking for suggestions. Easiest seems to be getting an 8 or 16 gig card and side loading a ROM but i'm guessing boot time and performance may suffer a bit. Not overly interested in it as an e-reader but on occasion may read a magazine or something if i'm traveling.

Looking for a little direction here and opinion here.
