rooting

The same way as a Droid, by reading the guide on the "All things root" page for the model of phone you are trying to root :)
 
Do you mean the home screen? You can go to manage apps in the settings and clear the defaults on HTC Sence and Home. After you do that push the home key and it will ask you if you want to use Sense or Home and select home.

Or if its easier for you, you can download an app called home switcher and it will switcxh to home for you.

Theres no need to root to use home over sence. There are also other home replacements you can use if you dont like sense like Helix, ADW Launcher or Launcher Pro. Just search the market or the forum.
 
I would suggest that you go to the all things root section of this forum and do some research on rooting. There are many great things about rooting and gaining performance, however it will still not be close to a droid in performance. A rooted droid is the fastest phone available at the moment. But a rooted and overclocked eris will give you better performance and with the right ROM better battery life.
