chmod 755 says to set file permissions so that anyone can read and execute the file, and only the owner can write to or delete it.
su is the set user command - used alone, without additional parameters, it sets the user to root. If successful, the last symbol in the prompt line will change from a $ to a #.
I doubt that the order of chmod and su matter but it won't hurt to try both ways.
Having to enter firewater twice on the chmod command line means that something has gone wrong. Entering it twice may be hiding the error but I doubt it fixes anything. What do you get when you don't do that?
The final command executes firewater and won't work if the prompt on the line doesn't end with the #.

ah right - i get you - ive not done any OTAs prior to rooting - so FW might be ok for me - the utube vid i mentioned before gives me more confidence as it seemed to make clear a few steps that i was vague on before - so maybe soon i shall try it
