Not really sure how much more a detailed manual you need.
Go to menu>settings>about phone>system tutorial.
Never opened a phone's manual in years. This is my first Android phone, and after a couple of weeks it seems I already know my way around it.

If you need a phone manual then its designed for you I guess (kidding). Seriously, I've never used that thing either, but never needed a manual as well.
There's an Android manual available if you Google for it, but you did not mention what version of Android you are running (different manuals per version). Also, the manual wont be completely applicable since Samsung made their own changes.
A question though, what do you need to know about the phone that is not already staring you in the face?

WHO THE HELL DO YOU THINK YOU ARE??? Do you ask EVERYONE that asks you a question "what do you want to know that for ?" Have you not herd that sometimes there are HIDDEN ITEMS and fetures and settings and ect..ect..ect that are NOT listed in the manual.
O and my phone is a ......... look left lol

I know most of the settings already. All I wanted to ask was what you know, so that I can just tell it to you outright what you needed.
I could give you a link to the general android manual, but as I said, I need to know what version of Android you are running to link you to the correct manual. There are several manuals in the net.

Almost forgot. Samsung has secret codes that probably wont appear there, since its a general user manual, and Samsung codes wont work for other Android phones. These codes also arent printed in device manuals.

I have a Galaxy S too on Android 2.3 and I try to use stock apps wherever possible.
Q1. The Email app. I have two accounts. I set the retrieval interval to 4 hours, because to me a non-dead battery is more important than getting a mail 20 seconds after it is sent. However, every time I select and open an email account, it will start to synchronize with the server, even if it was just synchronized a minute ago. How do I make the phone obey instructions and synchronize automatically only according the the time interval I have set?
Q2. How does switching between wifi and cellular data work? Say I walk into my office from outside, after how many minutes does the phone switch to wifi, if at all?
Q3. And what if the wifi connection is faulty, eg there are many public providers which have a working wifi AP, but it does not have connectivity onward to the Internet. Under this circumstance, is the phone smart enough to switch back to cellular data?
Q4. How do I make Android 2.3 use conventional symbols for the notification bar? For example, if Bluetooth or GPS is on, the symbol should be in bright white and not grayed white. Gray gives the wrong indication that it is switched off. This was working fine in 2.1.
Q5. The Memo app. How do I save or copy all my existing memos to my external SD card? I intend to change to the Galaxy Note soon and I need to migrate all my memos.

Does it not alert you of emails on time? The app doesnt actually download the emails as you receive them, only headers. If you havent opened the app for a long time, it will refresh the cached headers.
In my experience it would depend on whatever the phone is doing at the moment. If the phone is currently accessing data through mobile network, it will not switch. Once the phone stops accessing data (in between sync times for example), it will switch to wifi it can connect to it once it needs a connection.
I must admit I havent tried this. The only wifi my phone connects to is at home, as I have found my mobile internet connection faster than most public wifi, and since I have an unlimited data plan, I never bothered to try this.
EDIT: I just saw you are on 2.3.
I cant comment on official 2.3 since Official 2.3 is not yet available in my country for my phone.
The official Memo app syncs to Outlook Notes via Kies, so if you really dont want to use other more fully featured note apps, you can do this route, then sync the notes to the GNote via Kies once you have it.

Please realize there is no need for criticism. Some folks have already provided links for you to check out in response to you OP. If you are going to continue being negative, people may not want to spend their time helping you. Perhaps if you could explain to us what you are looking for in a more detailed manual for then most likely we will be able to answer your questions from the top of our heads or give a solution to your problem, which would hopefully save you time. After all, that's what a forum is for right? To save everyone's time?

The 4 hours you just set is for automatic updates. You opening the application itself is called "manual update" it's exactly what it sounds like. You are manually updated the app yourself instead of the system doing it automatically.

You pull down the notification panel and turn on WiFi. The phone will not do this automatically. (you can download applications that will do this automatically based on location services, GPS) Once WiFi is on and connected it will use WiFi over the data. This change is permanent until you turn off WiFi or it loses the signal.

If there is no WiFi support with WiFi on then the phone will use data. Doing this consumes lots of battery power. If the WiFi provider is very weak, then your experience connecting to the internet will be slow. If it's too slow for you to bear (or unresponsive) then turn off WiFi and use data. The phone cannot turn off WiFi on it's own, but once it detects it does not have WiFi signal, it will use the data. From personal experience it's faster for you to just turn off WiFi instead of leaving it up to the phone to figure out that it needs to use the data. You save battery power doing this too. (Note: I am speaking from experience with an unlimited data plan)

I believe if you want to change the icons on the notification bar, you will need to get root access on your device. I have 2.2 so I cannot respond to this question very well.
