You can set the time until it shuts off (even to not shut off). That's a battery saving measure. If you want it to stay on when it's plugged in, there are apps and widgets you can use. I use the Stay Awake widget (it's free).

Try checking your Settings -> Display -> Sleep timeout value to see what it's set to (I'm guessing to a very short duration).
