So, after months of waiting for the One S to come out, I was a bit shocked by the "true amount" of storage space it offered

You're right, there have been numerous posts about this, but there is a very simple solution. The issue appears to be caused in the majority of cases by some kind of build up of charge in the handset.

If, instead of boost charging all the time, you reasonably regularly allow toeh battery to drain fully and remove the battery for some 15 minutes before replacing and charging, then teh issue will go away
