A dodgy or very slow SD card would be my guess. I put a 16GB SD card from play.com in and had no problem at all. It was the one I used to use in my HTC Hero.
All depends on the speed rating of the card. I believe the phone is supplied with a class 4 card, so if your replacment was lower than this you would notice slowdown.
I recently upgraded to a 16GB class 10 card and noticed the gallery loading times were much quicker....
