Root Secure and private apps

Currently I have a Nexus 7 (2013) tablet running the stock firmware and apps. I want to move to a more secure and private environment.

I think I need 4.4 AOSP, replacing the stock Google apps with more privacy and security-oriented ones. Here are the apps I have in mind:

Internet access (TCP): Orbot (Tor Project / Guardian Project)
Browser: Firefox (Add-ons needed? Can use Orbot)
IM/Chat (2 apps needed?) ChatSecure (Guardian Project) (was GibberBot. Can use Orbot)
Voice calls: Ostel (Guardian Project)
E-mail (somewhat hopeless, restrict usage accordingly): K-9 Mail client w/ APG?
Contacts: ?
Mapping: an OpenStreetmap client? Which one?
Camera: ObscuraCam? (Guardian Project)
Password manager: Passwdsafe? (not LastPass or other on-line service)

Will AOSP 4.4 work without the Gapps? Are there better alternatives? Comments welcome!

Anyway, just wanted to give a heads up that I moved this to the Ny 2013 ATR section where other device owners like WooHoo will be able to help you out getting system apps frozen and replaced.:)
