Root SetCPU, Kernels and ROMs

I'm using a rooted Samsung Fascinate from Verizon and was wondering how I'd be able to get my phone running past 1GHz. I've seen pictures of Galaxy S phones going at 1.2 and one at 1.6, but I know nothing about ROMs and Kernels.

Anyone with some spare time care to help?
