[Optional]Are You rooted & which Rom: no, stock

I'm new to android, just bought HTC desire, really impressed with it. Have couple of questions, need help with them.
1) What i should not do after rooting the phone? I mean things that can not be repaired with hard reset.
2) Is there a way to completely reinstall android? Even if i haven't made a backup file? Even if i don't need any data on the phone or SD card? As i understood, root will not be deleted after hard reset. Is it possible to return phone to 100% factory settings?
Sorry for noobstyle questions and grammar mistakes.

Once rooted, dont accept OTA updates.

Be sure anything you flash, you check the MD5 in an application (Tells you if the file is complete if the number matches the one provided by the uploader). Dont interrupt the flashing process by removing power. If it is flashing from your computer, dont remove the USB cable either

Thanks for the answers.
Another question - i want to make the search button (useless for me) as an answer button. For example, if someone calls me - touchscreen will be blocked (or just answer button) and the only way to answer is by pressing the search button. Or, if i choose from my contacts someone i want to call - the only way to call will be pressing search button. Is it possible?

So after hours of reading, i have questions again.
1) As my phone is branded, i need a gold card. So if i will make a clean goldcard and put on it an original ROM 2.29.405.2 (PB99IMG.zip) - will this card return phone to complete stock and wipe all data, without using a pc?
2)As i understood, if i want a new ROM to get installed - i just should use a goldcard to put new ROM on it and follow the instructions?
Thanks for help.
