You could just use mt's tool that has all the stock apks in an easy to use manner, and aplus has a stock theme for gingersteem that has the stock lockscreen.
I'd link but its overlycomplicated in the phandroid apps on my phone

Edit: just realized that all the things you are looking for is in the stickied all things root guide the stock apps installer is under guides, and the stock theme is under well themes

I LOVE the stock launcher for LG's flavor BUT the reason it isn't in Gingersteem is because it uses more resources and uses a little more battery than ADW and others... Gingersteem is meant to help with speed at the same time not compromising battery life too much either. With that said, even if it DOES hurt battery life a TINY bit and is a LITTLE bit slower, I dont mind because I actually swapped out LauncherPro for ADW in System/App and it seems to be a little too just... plain IMO. I DO like the Opening Speed sliders in Launcher Pro though... OMG, off-topic, really sorry... will be going ahead and doing this swap though.

the best way to do it is... go ahead and get the APK, put it onto the External SD Card.
Boot phone, using whatever Root Explorer/File Manager you use, move LG Home.apk from External SD Card to /System/app and dont bother trying to install because it WILL tell you that it was not installed. Then just Reboot phone and it will be all good to go once you Clear Deafaults from current Default Launcher through Manage Applications.
