You have to use Android keyboard. When you do, there's a mic icon you can select.

change your keyboard until you find one with a microphone icon. i believe the stock samsung keyboard is missing the icon, but change over to the android keyboard and it will be in the bottom left. tap it and you're good to go.....

until 2.2 we can use vlingo. Just install the app and run it then say:

Text John Due message "This is what will be typed in the message box."

It is dead on and uses correct punctuation. i use it because I like swpe and don't want to change my keyboard the rare times I want to talk a text.
