How do I stop the text messages from popping up on the screen and scrolling across the top of the screen when they come in?

You can install Handcent or ChompSMS, and there's an option in the settings to set the notifications in the notifications bar to set to private. If enabled the content of the message won't be scrolled across the notification bar.
